Kadi Recipe



Kadi is simple n easy  and can have with Rice,Pulav,khichadi and any types of Paratha.....                                  
Ingredients:

Gram flour                 3 tbsp
Sour thick curds         2 cup+ Water 3 1/2 cups
Green chilies             2 
curry leaves              4- 5 leaves
Salt                         1 1/2 tsp     
Turmeric powder        1/8 tsp
mustard seeds          1/4 tsp
methi dana               1/4 tsp
Asafogetida              a pinch
Coriander leaves        2-3 tbsp
Ghee                       2 tbsp
Kastoori methi          1 tbsp

Method
Beat the sour curds and the three tbsp of gram flour together into a smooth batter. Add water , salt and turmeric powder to it
Chop green chilies fine.Heat two tbsp ghee in a pan, add  mustard seeds and methi dana and quarter tsp hing powder to it.
When mustard splutters add  curry leaves, green chilly and kastoori methi and add  curds .
and now let it to Stir over low heat till the kadi gets cooked and becomes thick.

Garnish with coriander leaves



Tips
To make gujrati kadhi add 2 tbsp sugar.
to make Punjabi Kadi add besan pakodi in this.
kastoori methi is dry fenugreek leaves, available in packets in grocery shops and have a unique flavor.

Dal Bati Recipe




Dal Bati is Marwari / Rajasthani cuisine. Vik was asking so long ,so Yesterday made it.

Preparation time 20 min.
Cooking Time     40 Min.
Serving    3
Ingredients
For Bati
2 1/2 cup wheat flour
1/4 cup + 3 tbsp Ghee
1/4 cup Curd
1/4 tsp turmeric Powder
1/2 tsp carom Seeds (ajwine)
1 tsp Salt
1 cup Ghee for dipping
For Dal
1/2 cup  Toor Dal
1/4 cup Chana dal
1/4 cup moong dal
1/4 cup Urad dal
2 Tomato,chopped
3 tbsp ghee
1 tsp Red chilli powder
1/4 tsp Mustard Seeds
1/2 tsp cumin seeds
1 1/4 tsp Salt
a pinch Heeng (asafogetida)
Curry Leaves few
2 tbsp Coriander leaves,chopped


Method
Mix oil,salt,ajwine,turmeric powder together in flour,then mix curd and make a dough with help of water but dough should not be very soft it's should be like poori dough.
Cover and keep for 60 min.

Wash all dals and soak for 30 min then cook it in pressure cooker till done.
Heat ghee in pan add musturad seeds,cumin seed let it splutter then add curry leaves and heeng. Add tomato cook till done,then add chilli, turmeric powder,salt and mix well.
Add boiled and mashed dal. If needed add water and boil.
Garnish with coriander leaves.


9-10 small ball with dough dent with thumb in middle and place in gas oven ,flame should be low, keep turning in interval.
It takes 40 -50 min. when it done it turns light golden color and raw smell will go off.

Take on clean cloth ,press little and it break slightly now dip in melted ghee for 5-7 min.

Serve with Hot dal if needed and you are not calorie conscious can take extra ghee also.
Green chutney,Papad, lemon slices and onion are best with it.


Note
For dal can use only toor dal also.
If you wants can add garlic and onion in dal while frying .

Dal Palak Recipe | Palak Dal Recipe



Before it also I posted Dal palak Recipe but It's quite different way  and I bet all of you Love this.
Ingredients:-           Serving  3
Green Moong Dal              1 cup
Palak clean & chopped     1 medium bunch
Onion,chopped              1 medium
Tomato chopped             3 medium
Green chilli, chopped      1
Mustured seed                 1/2 tsp
Asafogetida (Heeng)        a pinch
Turmaric powder            1/4 tsp
Garam masala                 1/2 tsp
Salt                               1 1/2 tsp
Ghee/oil                       3 tbsp+2 tbsp
Curry Leaves                   few

Method:-
Wash & drain dal, soak in 3 cup water for 45 min. Boil dal with same water till  done.
Blanch in salted boiling water for 1-2 minutes. Refresh in chilled water. Squeeze out excess water.Grind spinach into a fine paste along with green chilly.
Heat ghee in kadahi add musturd seed let it splutters, add asafogetida and curry leaves, add saute for a min. .
Add onion and saute till golden brown.Add tomatoes, cook for 4-5 min.add turmaric,salt and mix well
Add palak puree cook for 1-2 min. .
 Add dal let it boil for 3-4 min. (Add little water if its very thick)
Off the flame Add 2 spoon ghee and garam masala , cover it .
Serve hot with roti/paratha/rice.




Tips:-
For variation can use toor dal/yellow moong dal or can try with mix dal.
Can use garlic also

Khatta Besan

It's Maharastian dish but we like it very much.It's not my first time, oftnely I am cooking this but first time with Chana .Actually Besan was finished then I remember my Mom is using chana dal if there is no besan , so I tried it & result was too Good.

 Ingredients:-
Chana Dal                   1/2 cup
butter milk                   3 cup
Onion chopped           2 med.
Tomato chopped         3-4 med.
Green chilli chopped    2
Garlic chopped            5-6 clove
Curry Leaves              6-7
Musturd Seed             1/4 tsp
Turmaric Powder        1/4 tsp
Asafogetida                 a pinch
Salt                             2 tsp
Oil                              5-6 tbsp

Method:-
Soak chana dal in water for 1 hour. Drain & grind it.
Take butter milk with 2 1/2 cup water and add dal paste and mix well.
Heat oil add musturd seed let it splutter, add asafogetida,curry leaves,green chilli and onion. saute till onion turns golden brown.
Add garlic and saute for few seconds,add tomato then Add dal batter cook till batter becomes thick. It takes 7-10 min.
serve hot with Roti but It best with Jawar ki roti.
Tip
Can Use Besan (gram flour-1/2 cup) in place of chana dal and process is same
