Mango Kheer Recipe | Mango Rice Pudding

Kheer  is our traditional sweet and I tried to give a little twist in this Authentic Recipe.



Preparation and Cooking time: 30-40 min.
Serving: 4-6
Ingredients

1/2 cup long grain rice (washed and drained
1 ltr. milk
2 Cup Mango Pulp
1/2 cup
2-3 cardamom seeds (crushed)
3-4 almonds,chopped
Few threads of saffron threads, soaked in a little hot milk
3-4 skinned pistachio nuts (chopped)
Few tbsp raisins (optional)


Method

Wash and soak rice for 30 min.
Drain rice and Put the rice, milk  in a pan, bring to boil and simmer gently until the rice is soft and the grains are starting to break up
.

Add almonds, pistachio, saffron and raisins and simmer for 3-4 minutes.
Add the sugar and boil again for 5 min.
Remove the  kheer from heat and let it to cool.
Now add Mango Pulp and mix well.


 Serve either at room temp.or chilled.


Note 

If you feel rice is more in kheer then add 1/2 cup of milk.
Adjust Sugar also.

Kheer  is our traditional sweet that's why  Kheer is prepared in festivals, temples, and all special occasions.It is considered a holy dessert and used as a part of Bhog/Prasad .On Sharad Poornima (falling on 18/10/13)v ,In Shradhas (going), Last day of Navratri there are so many occasions to treat our self.



Ingredients
1/2 cup long grain rice (washed and drained
1 ltr. milk
1/2 cup +3  tbsp sugar
2-3 cardamom seeds (crushed)
3-4 almonds,chopped
Few threads of saffron threads, soaked in a little hot milk
3-4 skinned pistachio nuts (chopped)
Few tbsp raisins (optional)


Method
Wash and soak rice for 30 min.

Add almonds, pistachio, saffron and raisins and simmer for 3-4 minutes.



Remove the  kheer from heat and serve either warm or chilled or With Poori




Note 
If you feel rice is more in kheer then add 1/2 cup of milk.

Simply Delicious,Easy,Healthy recipe.Best for Hurry Barry evening. 

Preparation time 10 min.
Cooking Time 15-20 min.
Serving  2

Ingredients:
1 cup Basmati Rice (Long grain Rice)
1 large Onions, cut lengthwise
8-10 spring onion,chopped(green part)
1 capsicum , cut lengthwise in thin strips
1 cup broccoli
2 Green challis chopped
1.2 tsp Black Pepper powder
2-3 tbsp coriander leaves ,chopped
1/2 tsp cumin seed
Salt as required
3 tbsp Oil/butter

Method:
Soak basmati rice for 30 minutes. Drain the water and cook with 1 1/2 cups of water.
Boil Broccoli  in salted water.
Heat oil in a pan add cumin seeds,add green chilly , onion and capsicum sauté till onions becomes transparent. 
Now add spring onion and broccoli and fry for a few minutes till it is slightly cooked. Do not overcook. 

Add pepper and salt and rice ,mix well and cook for few seconds.Garnish with coriander leaves.
Serve hot with your favorite curry,curd or riata.

Note
Can use french beans also but boil it with brocoli.
Make sure broccoli should't be over boiled.
For royal look and taste add cloves,green cardamom ,pepper and cahewnut while add cumin seeds.

Baby Corn Pulav | Rice Recipe

After a long Break ,feeling so lazy so thought to cook something  quick, tasty n off-course easy.

Preparation time 10 min.
Cooking Time 15-20 min.
Serving  2

Ingredients:
1 cup Basmati Rice (Long grain Rice)
1 large Onions, cut lengthwise
6-8 Baby corn, cut lengthwise
1 carrot, cut lengthwise in thin strips
2 -3 cloves Garlic
1 tsp Pepper Powder
1/4 tsp red chilly powder
1/2 tsp cumin seeds
Salt as required
2 tbsp Oil

Method:
Soak basmati rice for 30 minutes. Drain the water and cook with 1 1/2 cups of water.
Parboil baby corns  in 1 cup salted water.
Heat oil in a pan, add cumin seeds, add garlic, onion and sauté till onions becomes transparent.Add carrot and cook for 3-4 min. 
Now add baby corns and fry for a few minutes till it is slightly cooked. Do not overcook. 
Add chilly powder and salt, mix well and cook for few seconds.
Mix rice and black pepper powder cook for a min

 Serve hot with your favorite curry.

Note
Can add french beans and all types of caosicum also.
Use butter for Royal Taste.
Make sure rice should't be overcooked.

Mutter Pulav Recipe | Peas Pulao Recipe



Ingredients
2   cup Rice
1   cup Green Peas
2   onion,sliced
2   Green chilli,De-seeded,chopped
3-4 tbsp Ghee/Oil
3-4 Pepper and Clove
1/2 inch Cinnamon
1 1/2 tbsp Cumin seed(Zeera)
1    Bay leaf
1 tsp Salt
1 Lemon 

Method
Wash and Soak rice in three cups of water for half an hour. Drain and set aside. 
Heat Ghee in cooker and add zeera,clove,pepper,bay leaf and cinnamon stick saute for few seconds.Then add green chilly and onion,saute till golden brown.
Add peas ,rice,and salt and mix it.
Add 3 cup of water and lemon juice , mix well and cover and cook on low heat till done (for 12-15 min.) 

Serve hot with curd,papad or pickle.

Shahi Khichadi/Khichdi | Rice Recipe



Usally I am making Khichadi weakly twice or thrice for Dinner,bcoz it's light & easy to digest, but with some variation.Today I am trying with Paneer.
Khichadi carries many nutritious value in herself. By adding veggies we can make it more healthy & tasty.So let's start......

Ingredients serving 3-4
Rice                          1 cup
Dal                       1 cup
Onion,Sliced 2 med.
Potato,Diced 2 med.
Carrot, rounded 2 med.
Paneer,Cubed 1 1/2 cup
Green Peas 1 cup
Tomato,sliced 3-4
Coriander leaves 2-3 tbsp
Lemon 1
To Temper
Oil/ghee                3-4 tbsp
Mustard seed 1/2 tsp
Curry leaves few
Green chilly  1
clove,Pepper,cardamom 2 -3 each
Bay leaf                  1
Turmeric powder      1/4 tsp
red chilly powder  1 tsp
salt                       1 1/2 tsp
Method
Soak dal for 30 min. and rice for 15 min. Wash and drain keep aside.
Heat oil in cooker add mustard let it splutter,then add green chilly, curry leaves,clove,pepper,cardamom,bay leaf.Add onion and saute few min
Add all Veggies and paneer saute 1-2 min, add turmeric,chilly powder,salt and mix well.
Add 4 cup of water and mix well. cover the cooker with lid and cook for 10-12 min on low flame or till done.
let it cool cooker, open garnish with coriander leaves and lemon wedges . Serve hot with papad.
Note-
Paneer is optional. You can deep fry paneer and keep aside and mix time of serving.
For more royal look and taste add cashew and rasine (kismish).
Can add veggeies of your choice.

Curd Rice/Tahir rice



Before marriage I never had Curd Rice.I had it in My GMIL's Kitchen and it was Tasty.I came to Tirupur and here my Neighboure..... Basically she is Gujarati but she knew all south Indian dishes.She taught me South Dishes, one of them Curd Rice.
Yanshu my 2 year noo noo 23 month old naughty boy also like it very much.

Ingredients Serving   2-3
Rice                           1 1/2 cup
Curd/ plain yogurt       2 cup
Milk                           1 1/2 cup
Carrot,grated            1 tbsp
Coriander leaves        1 tbsp
Salt                         as needed
Asafoetida a pinch
 To temper
Oil                   2-3 tsp
Mustard                     1 1/2 tsp
Urad dal                   1 tbsp
Green chilli chopped  2
cashews 2-3 tbsp(optional)
Curry leaves few
Method
Wash the rice thrice and pressure cook with 4 cups of water for 30 min. Cook it in medium flame till done. Once done, mash the rice well and mix  boiled, hot milk. Add more water if needed.
Let it cool down.Add the curd and mix well.
Add Carrot,coriander leaves and mix well.
Heat oil add musturd ,let it spluter then add urad dal ,cashews,green chilli and curry leaves and saute for a minute,then off the flame and mix it in rice.
Note
For curd rice , rice should be over cooked.
you can make without carrot also or can add raw mango,cucumber along with carrot.
Some times instead of carrot I add Fruits like pomegranate and grapes.
When rice is cooled down then add curd.Milk, curd, water quntity adjust according to the consistency you need.
Green chilli cut in big size, then kids can easly pick it out.
For Creamy taste add 1/4 cup milk cream along with milk.
