Mango Jam / Mango Murabba / Mango Chundda Recipe


Mango Jam also known as Murabba / chundda. I learnt this recipe from my Mom.It's a favorite pickle in all age group specially in  Kids.





Ingredients
1 cup grated  raw mango
1-1/2 cups sugar

Method
Wash the mangoes and dry them. Peel mangoes and then grate.
Take a heavy bottomed vessel/pan and  add the mango and sugar to the pan
.Cook on low flame and stir continuously until the sugar has dissolved completely.
 

You can see bubbles frothing up on the surface, but continue stirring until the sugar syrup reaches the single string consistency.
Turn off Stove and let it cool completely. Mean while stir it to prevent the sugar from crystallizing.


Now fill in airtight container.
Enjoy with thepla, paratha, or chapati.

Note
There is a another method--
Mix Sugar and Grated Mango and Place this mixture in the steel vessel.
Cover  the vessel with muslin cloth and tie it with a thick thread.
Keep it under sunlight for about 10-15 days or until mixture get proper consistency.
stirring it twice a day (morning and evening).



If you wants to Gujarati taste--
When mixture will be completely cool,that time Add Black pepper powder/Chilly Powder ( 11/2 tsp) ,Salt(1 tsp)

Always use raw mango.always use clean spoon for jam .
This jam can be  stored for a year .

Spinach Pasta | Easy Pasta Recipe


It's my second attempt I am making so rare becoz Vik doesn't like pasta very much.It's Healthy way to have something extra calorie


Ingredients

2 cups macaroni, cooked according to package directions, drained and rinsed
1 tsp chilly flakes
1/2 tsp black Pepper
2 cloves garlic, mashed and finely minced
1 tbsp butter
1/2 cup cheese Spread
6 tbsp Milk
3/4 cup Broccoli (boiled)
Salt to taste

Method
Cook Pasta according to direction.

Heat butter in pan add Garlic,add cheese spread and milk ,stir Continuously and cook for a min. then add Red chilly flakes,black pepper,broccoli.Mix macaroni and toss well.


Serve hot.



Note
Make sure pasta should be cooked but not overcooked.
can make in white sauce also,but I this is a easy way.

First time making Pasta so i made Simple and Easy version. And a very thanks to Rupali (My best frnd) who encouraged me for this.



Ingredients

Yummy Mummy Veggie Noodles




Ingredients:-
Noodles(Meggi, Yuppie)     2 block
onion finely chopped            1 med.
Capsicum finely chopped     1 small
cabbage finely chopped       1/2 cup
Carrot grated                      2 med.
soya sauce                          1/2 tbsp
Red chilli sauce                   3/4 tbsp
Vinger                                1/4 tbsp
salt                                     1 1/2 tsp
oil/ Olive oil                        4 tbsp
Tomato roughly chopped    8 med.
garlic clove                         6-7
sugar                                  6 tsp

Method:-
Boil Tomato and garlic with 1 1/2 cup water(take 1 whistle). Make it cool then grind and strain.
Heat oil add onion saute till  become transculate not brown. Add cabbage saute 3-4 min. add capsicum saute 1 min. ,add carrot and tomato puree boil it 4-5 min. .
Add chilli, soya sauce and vineger, salt mix well. Add 2 1/2 cup water make it boil then add noodles with their masala mix well .
Cook on high flame for 3-4 min. then low the flame and continually stir it and add sugar,cook for another 3-4 min . or till noodles not done but not over cook.

Tip
To make more healthy add more veggie like beans. sweet corn, spring onion...
