Now a days our lifestyle is very fast and we don't have time so wrape n roll recipes are perfact for breakfast or lunch in busy schedules. There are so many wraps recipe I tried this one and .On weekend I had little all veggies so very confused what to cook,then this came in my mind n it was yummmy meal.... 
Normally wraps are just normal Roti Sabzi but just different way to serve and best for Kids.



Preparation Time 15 min. 
Cooking Time     30 min.
Serving          3-4

Ingredients
For Chapati
2  Cup Wheat Flour
Milk as needed
1/4  tsp Salt

For feeling
1/2  cup Green Capsicum,cut into strips
1/2  Cup Red Bell pepper,cut into strips
1/2  Cup Yellow Bell Pepper,cut into strips
1     Onion Sliced
1/2  Cup shredded cabbage
1     small Green chilly chopped
1/4  tsp Garam masla
1/2  tbsp Red Chilly sauce
2     tbsp Oil
Salt to taste

1 cup Green chtuny 

Method
Mix salt in flour and make soft chapati dough using milk,cover and keep aside.
Heat oil add green chilly,then add onion and saute till golden brown.



Add all veggies and cook till 3-4 (veggies should be crunchy,don't overcook it)
Add sauce,garam masala and salt mix well and cook for few seconds in high flame.



Take small ball from dough and roll like chapati,cook on tawa and keep aside.
Take chapati apply butter then green chtuny then keep spoonful feeling and roll it tightly or can use foil also  for wrapping.



Serve immediately with chtuny or ketchup.



Note
Instead for butter can use cheese spread or mayonnaise.
After putting feeling add grated cheese then roll it.

I like fast foods very much but these are loaded with extra calories,so always trying to make them healthy.These tikkies made with upma (cooked sooji) I tried rawa rolls before it but
with mased potatoes but this is just like vegetable upma,actually I saw this recipe on Sanjeev Kapoor's Show @Sony TV and I did some changes and enjoyed Happy meal @ Home




Preparation Time : 10 min.     Cooking Time : 30 min.    Serving  : 4
Ingredients
8 Mini buns
1/2 cup butter
Oil to deep fry
Cheese Slices (optional)

For Flavored milk
3 cups milk 
2-2 cloves and pepper
4 garlic cloves
1 cinnamon stick 
2 whole green cardamoms
1 whole onion

For Tikki
1 cup semolina roasted(sooji/rawa) 
1/2 tsp Red chilli powder
2 tbsp oil
1  onions chopped
1 cup chopped mixed peppers (Red ,green,yellow capsicums) 
1 tsp ginger-garlic paste 
1/2 tsp cumin seeds
salt to taste


Dip/Chtuney
1 small bunch of coriander leaves
1/2 cup hung curd
1/2 onion
3 Green chill
1/2 inch ginger
3-4 garlic cloves
salt to taste

Salad
1 small cucumber sliced
1 tomato sliced
1 Onion sliced

METHOD
Heat the milk with all spices in a pan and cook on low heat for 6 minutes. 
Meanwhile Heat the oil in a pan add cumin seeds then add onion and sauté the onions till golden brown then add ginger garlic paste, peppers and cook for 3-4 minutes.
Then add sooji and saute for min. 


Add salt and red chili now strain the milk and pour into sooji mixture and whisk until the mixture is thick.
Grease a plate with oil and pour the mixture into the tray and spread it evenly with a spatula.
Place the tray in a refrigerator for 10 minutes to chill and set.
Cut the set semolina mixture into round or square tikkies. 




Heat the oil in frying pan or kadai and shallow or deep-fry till crisp on the outside. Drain on absorbent paper.
For the dip, blend all the ingredients in a blender till smooth.
Cut the bun apply little butter,then dip,keep a slice of tomato then tiiki put onion and cucumber slice and cover with bun.


Serve hot with tomato ketchup or Green dip.




Note
I used salad in slice but can use shredded or grated also because I felt it's easy to assemble and serve.
For tikkies can use any vegetables like carrot,cabbage,beans,green veggies too and paneer also.
If your tikki is breaking in frying then add 2 mashed potatoes in sooji mixture. 



Another way also-
whisk 4 tbsp maida (all purpose flour) with little milk (1/4 cup) to make a light batter. Season to taste with salt, pepper, cumin powder and chili powder.
Dip the tikkies into the batter and roll them in the crushed cornflakes or bread crumbs or poha (pressed rice) and deep fry or shallow fry.

If you are not Calorie  conscious  enjoy with Cheese ....

We went to temple this Sunday and got so much basil leaves in Prashadam,so I did this experiment and no doubt it's so Refreshing and Yummy ....

Preparation       Time 10 min.
Serving 4

Ingredients

3 tbsp juice of lemon(1 lemon)
6 tbsp Sugar
2 tbsp Crushed Basil leaves
1/4 tsp Salt
1/4 tsp Black pepper powder
2 glass Water(400 ml)



Method

Squeezing lemon juice
Add sugar.Stir until dissolved.Add Basil leaves and keep in fridge for 30-40 min.
Strain and serve chilled.



Another way also we can use-
Take sugar and 1 cup water. Bring to boil and stir to dissolve sugar. Allow to cool to, add lemon juice,basil and remaining water and stir it.
and refrigerate until chilled.



Note
I used basil but for variation can use Mint,coriander leaves and ginger also and enjoy every time new flavoure.
Adjust sugar According to your taste.

Last Sunday I got fresh grapes in comfortable price. Yanshu like grapes very much but before it he never tried grape juice it was his first time ,so I made according to his taste little sweet n he enjoyed a lot.



Preparation  Cooking and Time 10 min.
Serving 4

Ingredients
3 cups Grapes(1/2 kg)
5 tbsp Sugar
1/4 tsp Salt
1/4 tsp Black pepper powder
1/2 tsp ginger paste
1 glass Water(100 ml)

Method
Put grapes in mixer jar along with all ingredients. Grind it and filter with help of strainer.
If required add ice cubes and serve chilled.



Note
Adjust sugar according to your taste.
For a twist use 1 tsp lemon juice.

I don't like lauki but kofte I like very much. My Mom always making because we didn't like yukky lauki and As all Moms wants to feed something healthy to their kids.
This is really Yummy n healthy recipe for fussy eaters.



Preparation Time 10 min.   Cooking Time  30 min.
Serving  3-4

Ingredients
For kofta
1 Cup Grated Lauki(Bottle guard)

1/2 cup Besan(gram flour)

1/4 tsp carom Seeds

1 tsp Green chill paste

1/4 tsp Turmeric powder

Salt to taste

3 tbsp roughly chopped cashew and raisins
Oil to deep fry

For Gravy
2 Tomatoes
2 Onions
1/2 inch ginger piece
4-5 garlic

Spices
1/2 tsp turmeric powder
1 tsp red chill powder
1 tbsp coriander powder
a pinch of garam masala
1/2 inch of cinnamon stick
1 Bay leaf
salt to taste

2-3 tbsp fresh cream

Method
Take all kofta ingredients in plate or bowl except cashew and raisins and mix well. (if needed add water)
Divide the mixture into equal portions. 

Stuff little cashew and raisin mixture into each portion and shape them into round koftas.(I gave Tikki shape)

Heat sufficient oil in a kadai and deep-fry the koftas till golden brown and crisp on the outside. Drain on absorbent paper. 







Heat 1 tbsp oil in a non stick kadai. Add onions and saute until light golden brown.Add ginger and garlic saute for few seconds then Add the tomato and 1/2 cup of water cook for 3-4 min. or till tomatoes are pulpy.
Add red chili powder, coriander powder, turmeric powder, salt and saute.



Transfer this mixture into a mixer jar, cool and grind it. 
Take pan heat 2 tbsp oil add cinnamon stick and bay leaf,now add grounded paste and saute 2-3 min.
Add 1 cup of water and bring to a boil. Add koftas boil 2-3 min.
Add cream and garam masala and mix well .



Serve hot with roti,chapati,paratha or naan.




Note
You can give any shape to kofta like tikki,ball,roll etc.
I stuffed dry fruits in kofte but can use grated paneer also.
Kofta dough shouldn't be hard otherwise kofte will be very hard.

So many Bananas in my basket feeling very Sad becoz no one to eat them,so I searched this recipe on net and tried.I didn't like it very much but my Lil Prince enjoyed a lot.



Ingredients
2 Ripe Bananas,mashed 

5 tbsp Sugar 

3 tsp Ghee 

1/4 tsp Cardamom Powder

Method
Heat ghee in a nonstick pan. 
Add bananas and cook over low heat and stir continuously.
Cook till bananas become brown. If necessary add 1 tsp Ghee. 
Add sugar and cook for 2-3 min.



Add cardamom powder and off the flame. 
Serve hot or at room temperature.
To make Chocolate flavor add 1 tbsp chocolate sauce.







Note
If needed add more sugar.
cook on low heat.

Lauki Ka Halwa | Bottel guard Recipe



After a long Break....back to my world with sweet recipe which I made in Diwali time.It's very simple and easy.While we are fasting I used to make it. 



Ingredients:
3 cups grated lauki(Bottle guard)
1 1/2  cup milk
2 tbsp ghee 
4 tbsp Milk cream
3/4 cup sugar
1/4 tsp cardamom powder
Few dry fruits

Method:
Take ghee in the nonstick pan and add lauki and saute till it become little dry (4-5 minutes).
Then add cream and mix well.
Add milk let lauki get cooked in the milk completely.
Add sugar and again simmer till  halwa become dry.
Now add cardamom powder and dry fruits and cook for a while.Lastly add a tsp ghee cover and off the flame .



Serve hot or cool as desired.



Note
Adjust sugar according to taste.
For Royal Indulge add milk khoya(mawa)while adding sugar.

Salty Kaju | Diwali snack Recipe



This I learnt from my MIL and I added one more Item in my Diwali Snacks. Ingredients are same like other Savory bot Tossing in pepper and salt gives quite different taste.Best Tea Time snack.



Ingredients
2 cup Maida (all purpose flour)
1/2 cup Oil/Ghee
3/4 tsp salt
1/2 tsp black Pepper powder + 1/4 tsp salt
1/2 tsp carom seeds (ajwaine)
Oil to deep fry

Method

Sift refined flour into a large bowl. 
Add  Ajwaine seeds, oil and salt and mix together. 
Add sufficient water and knead into a semi-soft dough.Keep aside for 10-15 min.
Make a big  ball and roll but not very thin.Cut into Cashew shape with cookies cutter or small and sharp lid.



Heat sufficient oil in a kadai and deep-fry it on low heat till light golden and crisp. 
Drain on absorbent paper. Sprinkle pepper and salt and toss well.



Store it in air tight container.

Note
While you are sliding kaju into oil flame should be High but after that fry on low flame.Don't fry on High flame otherwise inner side will be Raw.

Malai Paneer | Kashmiri Paneer | Paneer Recipe






Paneer cooked in  silky,milky, creamy gravy.Easy to make when some guest are on the door.It's my First Attempt ,I searched on web and I made as my family member's taste.





Preparation Time: 05 min Cooking Time: 15 min
Serves: 3 servings
Ingredients:
150 gm Paneer (cottage cheese)
1/4 cup fresh cream
1 tsp Kasturi Methi (Dried Fenugreek Leaves)
1/2 tsp White pepper Powder
Few Coriander Leaves
Salt to taste

To Grind
2 medium Onion, chopped
3 Green chilies
1/2 inch  Ginger
2-3 Garlic cloves
1 tbsp poppy seeds 
10 Cashew Nuts

To Temper
3 Green cardamom,crushed
3-3 Clove and black pepper
4 tbsp butter/ghee



Method
Boil a glass of water and add chopped onion,boil it for a min. then grind along with ginger,garlic and green chilly.



Soak cashew nuts and Poppy seed in hot water or Milk for 60 minutes and grind them with water to make a smooth dry-fruit paste.
Cut paneer into desired shape. Heat 1/2 tbsp ghee in  pan on low flame. 
Shallow fry or roast paneer triangles or strips until its edges turn light brown. Drain and keep aside.



Heat remaining tbsp ghee in same pan. Add onion paste and saute until light brown. It will take  2-3 minutes on low flame. 
Add Cashew  paste and saute for a minute.
Add some water(1/2 cup) and let mixture cook until it start boiling .
When mixture starts to boil add paneer and fenugreek leaves.Mix and cook for 3 to 4 minutes on low flame. Add fresh cream .Mix well and cook for a min. Do not cook for long time after adding cream because it curdles if cooked more.



Turn off the flame and Garnish with fresh coriander leaves.
Serve hot with roti,naan but I enjoyed with Tandoori Roti.



Note
Instead of cashew and poppy seeds can use Alomands Or melon Seeds for different taste and texture. 
If you like mild sweet taste can add a tsp sugar.
Can add Garam masla and turmeric powder but have to compromise with creamy white color.
