Home Made French Fries | Potato Recipe


French fries Yuumm..... All time favorite of Kids n as well as elders also,first time tried at home n Followed the Sanjeev Kapoor .And Really it's easy at Home Now  Enjying French Fries  at home :))
Ingredients
5 large Potatoes
Salt to taste
Oil to deep fry

Method
Peel the potatoes and keep them soaked in water. Cut them into one centimeter thick slices and further cut into finger sized pieces. Keep sufficient water for boiling in a large pan. Put the potato pieces in the water, add 1 tsp salt and boil till half done.
Drain and cool the potatoes in the refrigerator or in cold water. Transfer the potato pieces into a zip-lock bag and seal after removing any excess air. Keep them in the deep freezer

When required remove them from the deep freezer and deep fry directly in medium hot oil till golden and crisp. Drain and place on absorbent paper. Add salt,chilly flakes only after removing them from hot oil.

Serve hot.

I love This from my Childhood but my In-Laws doesn't like Eggplant,so very rare  I cook this :(( but This time I got chance, My best Friend also like it n we were together and dish Came out.
       Without frying, just add olive oil,Green chilly,salt and dish becomes Babaganush a United Arab Emirates‎ Dish.

Ingredients
3     medium Bringals (eggplants)
4-5  tbsp Oil
1     tsp Cumin seed
1/2  tsp Musturd Seed
3     Onions,chopped
3     cups spring Onion,Chopped(green part)
1     inch piece Of Ginger,chopped
3      tsp Red chilly Powder
1/4   tsp turmeric powder
1/2   tbsp Coriander Powder
5      Tomatoes,chopped
8      Garlic Coves,chopped
Salt to taste
4       tbsp Fresh coriander leaves,chopped

Method
Wash, pat dry and prick (1 or 2 places) eggplants. Roast them over open flame or in a tandoor/preheated oven until the skin scorches and 
starts peeling off and eggplants start to shrink.

 Let them cool. You can cool them by dipping them in water. Remove skin and mash the pulp completely and remove seed. 

Heat oil in a kadai. Add cumin and Musturd seeds. Cook for half a minute and add onions and sauté until translucent. Add ginger and garlic 
and cook for a minute.
Add Spring Onion,cook for a min,add tomatoes and cook till done.
Add red chilli,turmeric,coriander powder and salt and mix well.
Add mashed roasted eggplants. Cook for seven to eight minutes over medium heat, stirring continuously. Add coriander Leaves.
  serve hot with roti,chpati or paratha. 

Note
Remove Seed otherwise you will get Bitter taste.
Immersing in water, easy to remove skin.
If wants can add boiled green peas also.
Adding spring onion is not complusary but it gives nice flavour.

Masala Pav Recipe | Pav Masala Recipe



It's one of the famous  Street Food. After a long Break here, was Busy with frnds,Family,Parents n today I got time so posting old Post.
FOR ONION-TOMATO MASALA 

Potatoes,boiled, mashed              2 large
Onions,finely chopped                 2 large
Tomatoes,finely chopped 3 large
•        Green capsicum,finely chopped 1 small
Oil                                          3 teaspoon
•       Butter                                        1/4 cup
Turmaric powder                           1/4 teaspoon
Red chilli                                     1 teaspoon
Pav bhaji masala 2 tablespoons
Coriander powder 1 teaspoon
Fresh coriander leaves,finely chopped a few sprigs
Salt                1 1/2 teaspoon

TO SERVE
pavs 6-8
Cucumbers,thinly sliced 2 medium
Tomatoes,sliced 2 medium

Method
Heat oil and butter in a thick-bottomed pan, add onions and sauté on medium heat for two to three minutes till light pink. 
Add tomatoes Capsicum and salt and continue to sauté on low heat till tomatoes are done. 
Add turmeric,red chilli, coriander powder and pav bhaji masala  and continue to cook on low heat for 5-7 min.
Add potato and 1/2 cup water if mixture is too dry and stir it and mash this Masala slightly.
Add fresh coriander and stir to mix well. 
To serve,
 slit pav and Roast on tawa with little butter .
Then arrange tomato and spread the onion-tomato masala (2 or 3 tbsp)and arrange cucumber and serve hot
If You want can use Sev or Mixture also.

Kadi Recipe



Kadi is simple n easy  and can have with Rice,Pulav,khichadi and any types of Paratha.....                                  
Ingredients:

Gram flour                 3 tbsp
Sour thick curds         2 cup+ Water 3 1/2 cups
Green chilies             2 
curry leaves              4- 5 leaves
Salt                         1 1/2 tsp     
Turmeric powder        1/8 tsp
mustard seeds          1/4 tsp
methi dana               1/4 tsp
Asafogetida              a pinch
Coriander leaves        2-3 tbsp
Ghee                       2 tbsp
Kastoori methi          1 tbsp

Method
Beat the sour curds and the three tbsp of gram flour together into a smooth batter. Add water , salt and turmeric powder to it
Chop green chilies fine.Heat two tbsp ghee in a pan, add  mustard seeds and methi dana and quarter tsp hing powder to it.
When mustard splutters add  curry leaves, green chilly and kastoori methi and add  curds .
and now let it to Stir over low heat till the kadi gets cooked and becomes thick.

Garnish with coriander leaves



Tips
To make gujrati kadhi add 2 tbsp sugar.
to make Punjabi Kadi add besan pakodi in this.
kastoori methi is dry fenugreek leaves, available in packets in grocery shops and have a unique flavor.

Carrot Cucumber Raita




After a unsaid Break,Enjoyed a lot with friends n now feeling Tired n lazy ,so lunch was too simple but i like this Raita very much...
Ingredients:-
Curd                              1 cup
Cucumber,finely chopped 1 small
Carrot Grated                2 med.
coriander leaves            2-3 tbsp
zeera,black 
pepper powder             1/2 tsp

salt                            to taste
Method:-

Beat curd. add all dry items and mix well.
Add cucumber,carrot,coriander leaves and mix well.



Serve Immediate or chilled
Best with any times of Paratha or rice.
