Mango Kheer Recipe | Mango Rice Pudding

Kheer  is our traditional sweet and I tried to give a little twist in this Authentic Recipe.



Preparation and Cooking time: 30-40 min.
Serving: 4-6
Ingredients

1/2 cup long grain rice (washed and drained
1 ltr. milk
2 Cup Mango Pulp
1/2 cup
2-3 cardamom seeds (crushed)
3-4 almonds,chopped
Few threads of saffron threads, soaked in a little hot milk
3-4 skinned pistachio nuts (chopped)
Few tbsp raisins (optional)


Method

Wash and soak rice for 30 min.
Drain rice and Put the rice, milk  in a pan, bring to boil and simmer gently until the rice is soft and the grains are starting to break up
.

Add almonds, pistachio, saffron and raisins and simmer for 3-4 minutes.
Add the sugar and boil again for 5 min.
Remove the  kheer from heat and let it to cool.
Now add Mango Pulp and mix well.


 Serve either at room temp.or chilled.


Note 

If you feel rice is more in kheer then add 1/2 cup of milk.
Adjust Sugar also.

Banana Halwa | Banana Recipe



So many Bananas in my basket feeling very Sad becoz no one to eat them,so I searched this recipe on net and tried.I didn't like it very much but my Lil Prince enjoyed a lot.



Ingredients
2 Ripe Bananas,mashed 

5 tbsp Sugar 

3 tsp Ghee 

1/4 tsp Cardamom Powder

Method
Heat ghee in a nonstick pan. 
Add bananas and cook over low heat and stir continuously.
Cook till bananas become brown. If necessary add 1 tsp Ghee. 
Add sugar and cook for 2-3 min.



Add cardamom powder and off the flame. 
Serve hot or at room temperature.
To make Chocolate flavor add 1 tbsp chocolate sauce.







Note
If needed add more sugar.
cook on low heat.

Lauki Ka Halwa | Bottel guard Recipe



After a long Break....back to my world with sweet recipe which I made in Diwali time.It's very simple and easy.While we are fasting I used to make it. 



Ingredients:
3 cups grated lauki(Bottle guard)
1 1/2  cup milk
2 tbsp ghee 
4 tbsp Milk cream
3/4 cup sugar
1/4 tsp cardamom powder
Few dry fruits

Method:
Take ghee in the nonstick pan and add lauki and saute till it become little dry (4-5 minutes).
Then add cream and mix well.
Add milk let lauki get cooked in the milk completely.
Add sugar and again simmer till  halwa become dry.
Now add cardamom powder and dry fruits and cook for a while.Lastly add a tsp ghee cover and off the flame .



Serve hot or cool as desired.



Note
Adjust sugar according to taste.
For Royal Indulge add milk khoya(mawa)while adding sugar.

Shahi Tukda Recipe | Bread Recipe


It's Quick n Easy Desert. All time favorable in my house.I remember my Mom always used to do with leftover Bread slices.And another All Delicious Recipes comes from our Moms n Grannies kitchen But name are different. :))



 Ingredients
Serves: 3 Cooking & Preparation Time: 45 mins

4 cups (500ml) Milk 
4 slices Bread 
1 1/2 tbsp custurd powder
Ghee to toast
2 tbsp Nuts (Pista & Badams chopped finely)

For the sugar syrup:
Sugar - 1/4 cup 
Water - 1/2 cup
Method:
Boil milk and the custard powder mixed in 2-3 tblsp of milk and mix into it and simmer the milk until its reduces to a thick but poring consistency.If you want you can add the chopped nuts in this stage.Refrigerate it till use.


Toast the bread with ghee in a non-stick tawa such that it becomes crisp. You can use  oven or toaster too. It can deep fried in ghee too.keep aside. Cut into desired shape or before roasting also can cut in shape.
Prepare sugar syrup by heating sugar and water in a pan until a syrup like one thread consistency form . Keep aside
Soak each slice in the sugar syrup and arrange it in a plate.Then pour the milk over the bread 
slices to soak well. Garnish with chopped nuts toasted in ghee. Serve immediately.





  Notes:
Deep frying sure is very tasty so once in a while rich indulgence is not a problem...but on low flame and Don't deep fry/toast in oil as it will spoil the taste.
The bread slices should be crispy else when soaked in milk it will become soggy.
If you wish you can cut the sides of the bread.usually I don't remove the sides of the bread.
You can use either white or brown bread. I used brown here.

Banana Split Recipe | Split Banana Recipe



Simply Delicious n Really it's easy to make at home ,Sorry I couldn't click step wise pics becoz Ice cream was melting but It's easy. Enjoy Yummy Banana Split...
Preparation Time 15 Min.
Ingredients
1 Banana,Sliced Lengthwise
1 scoop Strawberry Ice cream
1 Scoop Chocolate Ice cream
1 scoop vanilla Ice cream
2 tbsp Chocolate Sauce
2 tbsp Strawberry Sauce
1/4 cup Whipped Cream(optional)
3 Cherry or strawberry


Method
Place banana slices in a long Bowl (put slices on sides), top with Scoop of each Ice Cream (vanilla in middle and both are on in side), then garnish with Sauce. Top with whipped cream In middle.
Top with cheery. 
 Note
can use Choice of Ice Cream flavour.
Can Sprinkle Dry Fruits/nuts also.
For Garnishing use Fresh Fruits also.Adding Waffle stick makes it more attractive.

Sandesh/ Sandesh Recipe





I Love Bengali sweets very much. Sandesh making first time and it came very nice. Vik also liked it very much.
Ingredients
Milk -                  1 litre (preferably full cream)
Lemon Juice -      2 tbsp
Powdered Sugar - 1/4 cup+3 tbsp(7-8 tbsp)
Dry fruit Masala - 1 tbsp (just for garnishing)


Method:
Bring milk to a boil, then add lemon juice. The milk will start curdling and the water will separate  keep stirring to avoid burning at the bottom and until the water completely separtes. Switch off. 
Collect the paneer and transfer it to a muslin cloth,wash it well with water to get rid of the sour taste of lemon. 
Then tie and hang it for at least 30 mins for all the remaining water to get strained.(I squeeze water by hand)
Then add powdered sugar with this paneer and grind it a smooth paste.The orginal recipe says just to knead, but grinding makes it even more easier.



Now transfer this grinded mixture to a nonstick tawa and cook for 8 mins(just 6-8 mins not more than that).First it will be sticky slowly it will turn into a non sticky mixture.Switch off at this stage.


Collect this mixture in a bowl , the final stage mixture is called "Makha" - the not yet moulded sandesh  When it is warm make a small ball and flatten it slightly with ur palms. 


Make a small dent and garnish with Dry fruit masala. It will harden while cooling so sure it will not be as fragile as when we mould it.


Some Notes:
In total, the paneer cooking time should be only 7-8mins or little less, but sure not more than that else it will get dried and become crumbly then you will not be able to mould it.
If the paneer is over cooked we cannot roll them into balls ,if it is happens again grind it but now don't cook,by this way there is some chanches to make again proper shape,with me also happen when i was making  time.
If it is Under cooked you will feel the raw taste of paneer so take care while cooking.
If in case the mixture gets dried then add little milk, knead it once then mould it to your favourite shape.
You can also add kesar or any food color while or cooking.
I like it best when chilled.

Choco Panna Cotta




Ingredients:
3/4 cups whole milk
a drop of vanilla essence
2 tbsp sugar
2 tsp powdered unflavored gelatin 
2 tbs water for the gelatin
2 1/2 tbsp chocolate sauce
3 tbs cream
Method:
Take the water in a small bowl and sprinkle gelatin evenly over it. Let stand for about 5 mins until softened.
Heat the milk softened gelatin and salt over medium heat and bring to a simmer. Remove from heat.
Add chocolate sauce and vanilla essence.
Add the cream and stir just to  incorporate. 

Let cool to room temperature and pour into 4 small serving glasses or bowl and refrigerate for at least 4 hours.

Bread Pudding



First time I am making pudding,actually my SIL asked me for pudding reciepe ,then I serched on Net and I got this reciepe . It's very easy to cook and Kid's will really Love it.

Ingredients                                                                                           Serving   4
Bread slices            8
Milk                       1 & 1/2 cups
Sugar                     2/3 cup (11 tblsp approx)
Vanilla essence       1 tsp
Chocolate sauce     2-3 tbsp

Method
Tear the bread into pieces and add milk to it. Mash it well with potato masher or spoon. Mix vanilla and sugar and keep aside.
Pour the bread mixture in the vessel(flat 6 inch bowl )
Steam cook it by covering the vessel with aluminium foil with holes pricked for the steam to escape. Steam for 20-25 minutes.

After that,cool down and keep it in refrigerator for 2 hours minimum and then invert it  to a plate.Spread chocolate sauce and can cut it to desired shape before serving.

Kesari Shrikhand

Shrikhand is Gujarati And Maharastrian Cuisine but now it is famous in all over world because of it's staste 
Ingredients:
Curds                      1/2 kg.
sugar powder           250grm.(1 3/4 cup)
cardamom powder  1/2 tsp
Few strands saffron
pista and almond     2 tbsp

Method:

Tie curd in a clean muslin cloth  (3-4 hours).
Put into a bowl and add sugar .Mix it.
Rub saffron into 1 tbsp. milk till well broken and dissolved. Keep aside.
Pass through  strainer, pressing with hand or spatula.
Mix in cardamom powder and dissolved saffron and  nuts.
Chill for 1-2 hours before serving.
Tips
To make mango shrikhand add 2-3 tbsp mango pulp.
To make Strawberry flavor add 2-3 tbsp strawberry pulp.
